The objective of the phD thesis is to understand the determinants of the risks and benefits associated with the revegetation of food. This will involve conducting a joint assessment of the microbiological, chemical and nutritional risks of heavily vegetated diets (such as semi-vegetarian diets) and testing the sensitivity to some modifications of the food system.
