Our purpose is to produce knowledge and methods for the control of microbial hazards throughout the food chain by:

•    Understand the bacterial behavior along the food chain
•    Assess the food safety risk

Secalim's areas of expertise which enable it to conduct research on these two themes are:

•     Microbial ecology
•     Hazard Analysis and Microbiological Risk Assessment
•     Risk - Benefits Assessment & Multicriteria analysis
•     Innovation and Food Processes, in particular with Biopreservation and High Hydrostatic Pressure

Secalim also has expertise in two bacterial models:

•     Campylobacter jejuni, involved in food poisoning
•     Brochothrix thermosphacta, responsible for spoilage of food products
