Quantify and monitor Campylobacter contamination during the slaughtering process and determine the importance of the production environment in the persistence of Campylobacter on carcasses [Pulsar Project].

Campylobacter is a pathogenic bacterium responsible for gastroenteritis linked to the consumption of contaminated poultry meat. Controlling it at the slaughterhouse requires characterization of the sources of contamination and the factors associated with its persistence in the production environment. The aim of the project is to monitor and quantify Campylobacter contamination during the slaughtering process, and to characterize the ability of strains to persist in the production environment.
