SEPIA Monitoring of production environment in food industries [CRD Anses]

Hazard analysis and control in production environments is a topical subject and a lever for food safety.

The SEPIA project, carried out with the support of Anses, falls within the framework of the EGAlim law of 2018 which requires the authorities to warn if the monitoring of production environments in the agrifood industries is likely to be harmful for the consumer. The analysis and control of microbiological hazards from production surfaces is essential in order to reduce the risks of product contamination which may affect the health of the consumer, but also be a source of food waste. As these practices are recent, manufacturers suffer from a lack of knowledge about their application. The mission of the SEPIA project is therefore to identify knowledge on the subject as well as the practices of manufacturers for microbiological monitoring of their production environment in order to tend towards harmonization and strengthening of practices for controlling microbiological hazards. A webinar was held on November 4, 2020 which can be re-watched below.A scientific session  was held on january 13, 2021 to follow it up with a return on surveys carried out among manufacturers.
