VEG&LAIT : Producing, processing, and innovating on the farm: a sustainable system for relocalizing and diversifying the supply of legume protein [ANR project]

Context:

In France, dairy production and processing account for around 6% of greenhouse gas emissions. Plant-based alternatives emit less, but are often less appealing in terms of nutrition and taste. Legumes offer a major opportunity to diversify agricultural systems, reduce environmental impacts, and strengthen the autonomy of supply chains.

Aims:

The VEG&LAIT project aims to exploit the complementarity between milk and legumes to develop an integrated sector for “mixed” products, from agricultural production to food processing. Drawing on networks of farms engaged in on-farm processing and short supply chains, the project seeks to structure this new sector, optimize the use of co-products, and disseminate innovations.

SECALIM is participating in this project by coordinating WP5 and supervising the Ph.D thesis of Mohamed Traoré.
